Tallulah Gorge offers excellent trad climbing in a truly beautiful location. Head to the visitor center first to get a permit (call ahead to make sure they're offering them - poor weather often closes down access to the climbing) then head down a climbers trail to the main wall. The aspect is southwest so expect lots of sun in the afternoon. This is an excellent winter destination because the rock heats up significantly in the sun even in the cold ambient temperature.
Camping is available in the park, or pay a day use fee at the main parking lot. The visitor center has a Dixie Cragger's Atlas guidebook you can reference.
